Avocado, Papaya and Cucumber Salad

I’ve just created this luscious salad perfect for the coming summer. I eat it for breakfast along with beetroot and sumac crackers, radish kimchi, cabbage kraut and some raw veg with a nut butter dip. All homemade! Cooling for hot flushes, rich in leafy greens containing folate for DNA repair and healthy monounsaturated fat for hormones.

Ingredients

1 avocado
1/2 small papaya
1 medium cucumber
handful of fresh salad and herbs: mint, asian basil, parsley, cos lettuce
lime, olive oil and apple cider vinegar for dressing

Dice the avocado, cucumber and papaya and add to a bowl along with chopped herbs and lettuce of your choice. Squeeze a small lime over the top with 2 tsp of apple cider vinegar and 1-2 TB of olive oil and toss. Season with salt and garnish with chopped macadamia nuts.
